Shin Of Beef

Shin of beef has to be one of the tastiest cuts on the beef animal. You can braise it slowly and serve with cabbage and mashed potatoes or I always dice some and make a casserole with 50% shin of beef and 50% stewing steak, infact if entertianing I will also add diced venison. This cuts really adds depth to many dishes, yet is rarely seen out of a traditional butchers.
